METHOD
On the day you make your chicken, cook twice as much barley and reserve half of it. When you are ready to use your leftovers, chop any leftover vegetables and shred your leftover chicken, mix it with the barley and reheat until pipping hot. Serve with a drizzle of extra virgin olive oil. If it feels a bit dry, add a tiny bit of water or chicken stock while reheating it.
