Mackerel Salad Nicoise

  • 4 potato
  • 4 ripe tomatoes
  • 200 g green beans
  • 24 black olives
  • 12 anchovies optional
  • 3 tbp pinenuts optional
  • 150 grams spinach leaves
  • 6 Mackerel fillets
  • 4 eggs

Keep in mind that the tuna contains high levels of mercury, a heavy metal, which should be avoided for infants and women who are pregnant or planning to conceive. Adults probably should eat no more than two servings of tuna per week.

METHOD

1. Boil the potatoes until they are tender, put aside and leave to cool. At the top of the steamer, either on top of the potatoes or separately, steam the beans until tender. If you will be feeding a baby, cook the beans until they are soft. Boil the eggs to your liking unless it is for children under 1 year of age or pregnant women, in which case, cook until both the yolk and white are solid (approx. 10 min). While cooking eggs, cook the mackerel in the Grill or steam, you can also use leftovers mackerel. If you are going to roast, heat a tablespoon of olive oil in an iron and roast the mackerel on the side of the skin first, during 3 minutes. Turn it round and cook for another 2 minutes. If you decide to steam instead, cook until the meat comes apart easily when inserting a knife in the thickest part. Approximately 5 minutes. If time permits, toast the pine nuts in a dry skillet under a low flame, careful as they burn easily, if pressed for time, add them as they are. Wash the tomatoes and spinach and drain them well. Mix all the ingredients and dress with olive oil. Serve with bread.

INFORMATION

For babies, this is a great dish to eat with your hand. In your child’s favourite plate put some potatoes, diced tomatoes, egg cut in small pieces and beans for them to grasp. Do not use the salted anchovies and olives, and only add the pine nuts if your child is not allergic to them. Drizzle with olive oil and let them enjoy feeding themselves!

VARIANTS

You can try with another type of fishes as well, such as: tuna, salmon, red snapper. If you have a limited amount of time, you can also use canned or smoked fish instead.
